Well, it's been close to a year since I last posted. I've been thinking about chunky salsa. Vicki Espino has a killer recipe. It's posted below:
1 can corn (kernels, not creamed), drained
1 can black beans, rinsed and drained
1 can petite diced tomatoes, drained or 5 Roma tomatoes, seeded and diced
2 jalapenos, seeded and diced
3-4 green onions, sliced thin
1/3 of a small red onion, diced
juice
cumin
sea salt
cilantro
olive oil
The last four ingredients to taste.
Mix together in bowl. Cover and refrigerate for at least an hour or so. Serve with Tostito's Scoops.

Pumpkin Ravioli?
I like to cook. I like to try new recipes. So Pumpkin Ravioli by Jessica Seinfeld seems fairly easy to make. I'll try it tonight. Thinking a simple salad and Hendry Dry Rose to go with it.
